1 large brown onion, finely chopped
2 small granny smith apple, peeled, cored, finely chopped
130g brown sugar
330ml white wine vinegar
4 star anise – in muslin
1/2 tsp ground cloves.
Wash the beetroot and cover it with cold water.
Next, boil it until it’s just tender and then drain.
Rinse the betroot under cold water, peel and grate.
Meanwhile, combine the onion, apple, sugar, honey, vinegar, star anise and cloves in a medium saucepan.
Bring to the boil over high heat, stirring to dissolve sugar.
Reduce heat to medium-low.
Simmer for 10 minutes or until the apple is tender.
Add beetroot to apple mixture.
Simmer for 45 minutes or until mixture is syrupy, then remove anise and it’s ready to serve.
