Recipe supplied by V-ZUG

For the chicken:
1kg chicken thigh fillets, trimmed
8 cloves garlic
1 cup mixed olives
1/4 cup tomato paste
1 tbsp harissa paste
1 tbsp brown sugar
400g truss roma tomatoes

For the gremolata:
1/2 cup flat leaf parsley, chopped
1/2 cup coriander leaves, chopped
1 tbsp lemon juice
1 tbsp lemon zest
2 cloves garlic

Preheat combi steam oven to hot air humid 160°C
Mix together chicken, garlic cloves, olives, tomato paste, tomatoes, harissa paste and sugar
Place in a large baking dish and season with salt and pepper
Bake for one hour
In the meantime to make the gremolata, mix parsley, coriander, lemon zest and garlic in a small bowl
Serve chicken with gremolata. Serves four.
