Ingredients
1.25kg beetroot
1 large brown onion, finely chopped
2 small granny smith apple, peeled, cored, finely chopped
130g brown sugar
125ml honey
330ml white wine vinegar
4 star anise – in muslin
1/2 tsp ground cloves.

Method
Wash beetroot, cover with cold water.
Boil until just tender. Drain.
Rinse under cold water, peel and grate.
Meanwhile, combine onion, apple, sugar, honey, vinegar, star anise and cloves in a medium saucepan.
Bring to the boil over high heat, stirring to dissolve sugar.
Reduce heat to medium-low.
Simmer for 10 minutes or until apple is tender.
Add beetroot to apple mixture.
Simmer for 45 minutes or until mixture is syrupy. Remove anise.
