Recipe supplied by Olympus Cheese

2 cups of self raising flour, sifted
1/3 cup brown sugar
100g walnuts, chopped finely
1 tsp bi-carb soda
2 eggs
1 cup milk
300g Olympus ricotta
2 ripe bananas, mashed
3 tsp cinnamon
Honey to drizzle

Preheat your oven to 180°C
Grease and line a 21cm x 9cm loaf tin
Combine flour, bi-carb, walnuts and sugar in a large bowl
Mix eggs, milk and banana in another bowl
Make a well in the centre of the dry ingredients and slowly add the wet ingredients while mixing
Combine all ingredients well
Spoon the mixture into the loaf tin and place in the oven
Bake for 50 minutes
Allow the bread to cool and then slice it into 2cm thick slices and toast until golden
Combine Olympus ricotta and cinnamon in a bowl
Spoon the mixture onto the bread, drizzle with honey and serve.
